Sweet and tangy lemonade meets frozen popsicles in these easy-to-make summer treats! It takes just five minutes to prepare these pops, with freshly squeezed lemon juice, agave, water, and popsicle molds. There's no refined sugar, no artificial colors, and no dairy!

What's better than a cold glass of lemonade on a summer day? These lemon popsicles! With this easy recipe, you just need to mix up some fresh lemonade, pour it into a popsicle mold, and freeze to create an ice-cold twist on a classic summer drink.

Ingredient Notes & Substitutions

With just three simple ingredients, these popsicles make it easy to skip the store-bought versions with artificial colors, flavors, and preservatives. In this section, you'll find everything you need to know about these ingredients and whether you can substitute them.

water: I recommend purified, distilled, or spring water for the best taste.

lemon juice: Freshly squeezed juice will produce the best flavor in this recipe, although you can use bottled as well. Note that bottled juice usually contains preservatives or other artificial ingredients that you may not want. Lime juice would work equally well in this recipe.

agave: I chose agave for this recipe because it has a neutral flavor, it's a natural sugar source, and it's liquid, so you don't need to work too hard to get it to dissolve. You could also use maple syrup, but it does have a distinct taste that you may notice. Granulated sugar would work, too, but you will need to heat some of the water and stir the sugar into the hot water to ensure it dissolves. If you're substituting maple syrup or sugar, you may need to increase the amount because agave is the sweetest of the three.

How to Make the Best Lemon Popsicles

Getting a soft texture: The agave in this recipe doesn't just sweeten the popsicles. It also helps to create a soft texture, so if you reduce the amount, you may end up with an unexpectedly hard and icy flavor. Freezing your popsicles as quickly as possible also helps create the best texture. To do this, set your freezer to its coldest setting and use the quick freeze button, if you have it.

For the freshest flavor: Use fresh-squeezed juice and skip the store-bought stuff with artificial ingredients. It's just one extra step, and it's definitely worth it!

Mix well: These popsicles are super easy to make, but you'll want to mix the lemonade very well. The agave is heavier than the water and lemon juice, so it will sink to the bottom. Take the time to stir everything completely so your popsicles are uniformly sweet and sour.

Popsicle molds: I find that silicone popsicle molds are the easiest to work with because the popsicles come out easily when you just push up from the bottom. Stainless steel molds also work well, but you may need to run them under warm water briefly to release the popsicles.

Storage: To store the popsicles for up to a week, stack them in a large freezer-safe bag. For longer storage (up to 2 months), protect them from freezer burn by individually wrapping each popsicle before you put it in the freezer bag or container.

Make Them Your Own

If you want to try a different twist on these popsicles, there are plenty of options to choose from:

  • Creamy lemon popsicles: Replace the water with a 13.5-oz (400-mL) can of coconut milk. If you do this, you can bump up the creaminess even more by adding 1 tablespoon of cornstarch. Then heat the mixture on the stove, whisking constantly, until it thickens slightly. Pour into the molds as usual.
  • Endless fruit combinations: Lemon pairs perfectly with many fruits, including berries, cherries, watermelon, peaches, mangos, and passion fruit. Just blend your fruit or fruit pulp into the lemonade mix and freeze.
  • Add herbs: Fresh mint, basil, and rosemary are all great options to add into your lemonade popsicles. Instead of blending the herbs into the lemonade, I recommend using a muddler to release the herbs' oils into the lemonade, then removing the leaves.
  • Ginger lemon popsicles: Grate some fresh ginger (amount to taste), then blend it with the lemonade before pouring it into the mold.

Ingredients

  • 1 3/4 cups water
  • 1/2 cup freshly squeezed lemon juice (about 3 to 4 medium lemons)
  • 1/4 cup agave*

Instructions

  1. In a pitcher or other large container, mix water, lemon juice, and agave until well combined.

  2. Pour the lemonade into the popsicle molds, leaving about 1/4 inch (1/2 cm) of space at the top for the popsicles to expand as they freeze. If you're not using a pitcher to pour your lemonade, I recommend using a funnel.

  3. Cover the popsicles and insert popsicle sticks, leaving about 1/4 of the length of each stick outside the mold.

  4. Freeze until frozen all the way through, about 4 hours or overnight.

  5. To remove popsicles from the mold, leave them at room temperature for about 5 minutes. Pull them out, then store them in a freezer-safe bag or container in the freezer.

Notes & Hints

After mixing the ingredients, you may want to add an additional 1 to 2 tablespoons of agave to taste.

For best results, freeze your popsicles quickly by setting your freezer to its coldest setting and using the quick freeze button (if you have one).

The exact amount of time required to freeze your popsicles will depend on your freezer settings and your mold's material.

Some popsicle molds release the popsicles better if you quickly immerse them in warm water first.
